Mujaddara

DIETS:  LC GF VG VT
Serves 3

Ingredients:
  • 1/4 cup olive oil
  • 2 yellow onions, thinly sliced
  • 1/2 teaspoon salt
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon regular paprika
  • 1/4 teaspoon ground cumin
  • 1 cup spinach, roughly chopped (or leafy greens of choice)
  • 1 teaspoon red wine vinegar
  • 1 1/2 cups cooked lentils
  • 3 cups cooked brown rice

Instructions: 
  • Heat olive oil in large skillet over med-high heat.  Add onions and salt and cook until very tender and brown (about 15-20 minutes). 
  • Reduce the heat to medium and add the chili powder, paprika' s and cumin.  Stir well and cook for about 1 minute. 
  •  Add the spinach and vinegar and cook until spinach is wilted (3-4 minutes). 
  • Add the lentils and rice and mix well.  Serve immediately.
