1 cup spinach, roughly chopped (or leafy greens of choice)
1 teaspoon red wine vinegar
1 1/2 cups cooked lentils
3 cups cooked brown rice
Instructions:
Heat olive oil in large skillet over med-high heat. Add onions and salt and cook until very tender and brown (about 15-20 minutes).
Reduce the heat to medium and add the chili powder, paprika' s and cumin. Stir well and cook for about 1 minute.
Add the spinach and vinegar and cook until spinach is wilted (3-4 minutes).
Add the lentils and rice and mix well. Serve immediately.
