Mushroom Toast

Mushrooms are low in calories and provide a range of nutrients, including antioxidants, fiber, B vitamins, and minerals. Mushrooms have been linked to numerous health benefits, including improved gut and brain health, and protection against obesity, type 2 diabetes, certain cancers, high blood pressure, and more.

Ingredients: 
  • 2 Tablespoons butter (vegan, if desired)
  • 1 Tablespoon olive oil + a little more for the bread
  • 1/2 yellow onion, halved and thinly sliced
  • 2 teaspoons fresh rosemary, chopped
  • 1 teaspoon fresh thyme leaves
  • 8 ounces mushrooms, stemmed and thinly sliced (button, shiitakes, maitake's, etc)
  • 1 1/2 teaspoons salt
  • 1 Tablespoon dry vermouth
  • 1/2 teaspoon black pepper
  • 3 Tablespoons pine nuts
  • 4 thick slices bread (gluten-free if desired)
  • 1 Tablespoon parsley, chopped

Instructions: 
  • Melt butter and 1 Tablespoon olive oil in a large skillet over med-high heat.  
  • Add the onions, rosemary and thyme.  Cool, stirring often, until onions are tender and starting to brown (5 minutes).  
  • Reduce the heat to med-low, cover, and cook until onions are caramelized (15-20 min), stirring occasionally.
  • Add the mushrooms and 1 teaspoon salt and continue to cook until mushrooms are tender and starting to brown, stirring often (5-10 min).  
  • Add the vermouth and pepper and cook for a few minutes until vermouth has evaporated.  Remove from heat and keep warm.
  • Toast the pine nuts by heating in a small skillet over medium heat, shaking the pan often, until starting to brown (3-5 min). Remove from pan.
  • Make the toast by brushing both sides with a little olive oil and sprinkle with a little salt.  Heat the pan used for the pine nuts over medium-high heat and toast both sides of each piece of bread (1-3 minutes per side).
  • To serve, top bread with mushroom mixture, then sprinkle with pine nuts and parsley
