Ingredients:
2 Tablespoons butter (vegan, if desired)
1 Tablespoon olive oil + a little more for the bread
Melt butter and 1 Tablespoon olive oil in a large skillet over med-high heat.
Add the onions, rosemary and thyme. Cool, stirring often, until onions are tender and starting to brown (5 minutes).
Reduce the heat to med-low, cover, and cook until onions are caramelized (15-20 min), stirring occasionally.
Add the mushrooms and 1 teaspoon salt and continue to cook until mushrooms are tender and starting to brown, stirring often (5-10 min).
Add the vermouth and pepper and cook for a few minutes until vermouth has evaporated. Remove from heat and keep warm.
Toast the pine nuts by heating in a small skillet over medium heat, shaking the pan often, until starting to brown (3-5 min). Remove from pan.
Make the toast by brushing both sides with a little olive oil and sprinkle with a little salt. Heat the pan used for the pine nuts over medium-high heat and toast both sides of each piece of bread (1-3 minutes per side).
To serve, top bread with mushroom mixture, then sprinkle with pine nuts and parsley
