Mustard Beans with Bacon

Smoky bacon, creamy navy beans, and aromatic vegetables come together in this hearty, protein-packed side dish that delivers bold flavor with simple ingredients.

Time: 30 Minutes

Ingredients: 
  • 1 tablespoon olive oil
  • 1 carrot, chopped
  • 2 stalks celery, chopped
  • 1/2 an onion, chopped
  • 1/4 pound bacon or pancetta, chopped
  • 1 can navy beans, drained
  • 1/2 teaspoon salt
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon white wine vinegar

Instructions: 
  • Heat the oil in a medium saucepan.
  • Add the carrot, celery and onion and cook until softened and onion is translucent. Remove from pan and set aside. 
  • Add the bacon to the pan and cook until it starts to get crispy. 
  • Add the vegetables back to the pan and cook for another 1-2 minutes.
  • Add the beans and remaining ingredients and stir to combine.  Cook until heated through. 
  • Serve warm
