Ingredients:
1 tablespoon olive oil
1 carrot, chopped
2 stalks celery, chopped
1/2 an onion, chopped
1/4 pound bacon or pancetta, chopped
1 can navy beans, drained
1/2 teaspoon salt
1 tablespoon Dijon mustard
1/2 teaspoon Worcestershire sauce
1/2 teaspoon white wine vinegar
Instructions:
Heat the oil in a medium saucepan.
Add the carrot, celery and onion and cook until softened and onion is translucent. Remove from pan and set aside.
Add the bacon to the pan and cook until it starts to get crispy.
Add the vegetables back to the pan and cook for another 1-2 minutes.
Add the beans and remaining ingredients and stir to combine. Cook until heated through.
Serve warm
