Noodles with Peanut Sauce

Total Time: 20 minutes

Ingredients:
  • 1 lb spaghetti (or angel hair pasta)
  • 2 Tablespoons butter
  • 2 cups red bell pepper, sliced
  • 2 carrots, thinly sliced
  • 1/2 cup peanut butter
  • 1/2 cup water
  • 4 Tablespoons rice vinegar
  • 4 Tablespoons soy sauce
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon crushed red pepper
  • 1 cup peanuts

Instructions: 
  • Cook noodles according to package directions.  Drain. Keep warm.
  • Meanwhile, melt butter in large skillet until sizzling; add red pepper and carrot.  Cook over med-high heat, stirring occasionally, until vegetables are crisp-tender (3-5 minutes).
  • Combine peanut butter, water, vinegar, soy sauce, ginger and crushed red pepper in small bowl.  Add peanut butter mixture to cooked noodles, mix lightly.  Add vegetable mixture and peanuts, toss until well coated.
