Orange-Cranberry Scones

DIETS: LC VT
Makes 4 servings
Time: 60 minutes

Ingredients: 
  • 3/4 cup flour
  • 1/8 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 1/2 Tablespoons sugar
  • 1/2 teaspoon cream of tartar
  • 1 1/2 Tablespoons butter, chilled and grated into small shavings
  • 1 teaspoon orange zest (about 2 oranges)
  • 1/3 cup dried cranberries
  • 6 Tablespoons buttermilk
  • 1 Tablespoon flour
  • 1 teaspoon sugar
  • Cooking Spray

Instructions: 
  • Preheat oven to 350F.
  • Combine flour, salt, baking soda, sugar and cream of tartar in medium bowl.  
  • Add butter, orange zest and cranberries and mix well. 
  • Add buttermilk just until moistened (do not overmix). 
  • Sprinkle flour on work surface and turn dough onto floured surface.  Knead 5 times and place on greased cookie sheet. 
  • Shape into a 5" circle and cut into 4 wedges (cut into, but not entirely through bottom of dough). 
  • Sprinkle with sugar. 
  • Bake for 20-25 minutes until golden.
  • Serve immediately with softened butter.
