Oriental Ramen Salad

If you can't find broccoli slaw mix, just substitute a bag of regular coleslaw mix instead
Servings: 10
Time: 90 minutes

​Ingredients: 
  • 1/2 cup canola oil
  • 1/2 cup sugar
  • 1/4 cup red wine vinegar (or cider vinegar)
  • 2 Tablespoons soy sauce
  • 1 14oz bags of coleslaw mix
  • 1 14oz bag of broccoli coleslaw
  • 1/2 cup green onion, chopped
  • 1 3oz pkg. Chicken Oriental ramen noodles (with seasoning packet)
  • 8 oz cashews (or 2/3 cup slivered almonds and 1/3 cup sunflower seeds)
  • 1/4 cup sesame seeds
  • Salt/Pepper, to taste

Instructions: 
  • Make dressing by mixing oil, sugar, vinegar, soy sauce and ramen seasoning packet.
  • Add the slaw mixes and onion to a large bowl. Mix well.
  • Add the dressing to the slaw mix (the dressing separates, so stir well right before adding, then pour it on quickly).
  • Mix well and refrigerate for 1-2 hours (or overnight). 
  • Right before serving, add the ramen noodles, nuts and seeds.
  • Salt/pepper, to taste
