2 avocados, peeled, pitted, and sliced into small chunks (choose avocados that are ripe, but still firm)
2 green onions, diced
Instructions:
Bring a large pot of water to boil and prep all ingredients while the water boils.
Once water is boiling, add the pasta and cook according to package directions. Keep in mind you will be adding the broccoli during the last minute of cooking.
Meanwhile, preheat a large nonstick skillet over medium heat. Add the olive oil and garlic and gently heat (about 2 minutes - you don't want the garlic to burn).
Pour in the wine and raise the heat to bring to a boil until wine is reduced (about 2 minutes).
Add broth, lime juice, salt and pepper and bring again to a boil. Once the sauce is boiling, lower heat to a simmer.
When pasta has 1 minute left to cook, add the broccoli and cook remaining minute. Drain all into a colander.
Return pasta to pot and add liquid garlic mixture. Mix well.
Turn off heat and add avocado and green onions. Gently toss until warmed through.
Serve immediately.
