Pasta Fagioli

DIETS: LC VG VT
Serves 4
Time: Approximately 35 minutes. 

Ingredients: 
  • 2 tablespoons olive oil
  • 6 cloves garlic, minced
  • 2 pounds plum tomatoes, quartered
  • 16 oz can white beans
  • 1/4 cup dry white wine
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • dash black pepper
  • 1 teaspoon salt
  • 1/2 pound small tube pasta or shells

Instructions: 
  • Preheat a large skillet to medium heat. Add oil and garlic and cook for about 1 minute. 
  • Add tomatoes, beans, wine, thyme, oregano, salt & pepper.  Bring to a boil, then reduce heat to medium and simmer for about 20 minutes.  Mash occasionally with a potato masher to break up tomatoes and beans so they reduce into a thick sauce.
  • While sauce is cooking, bring a large pot of salted water to a boil.  Add pasta and cook according to package directions. 
  • When pasta is done, drain (reserve a bit of pasta water in case the sauce needs to be thinned a little).  Return pasta to the pot and mix in sauce mixture until well blended. 
  • Serve immediately!
