Peanut Butter, Bacon & Banana Flatbread

Servings: 2
Time: 40 minutes

Ingredients: 
  • 2 9-10" flatbreads
  • Olive oil
  • 4 slices bacon, cooked & crumbled
  • 1/2 cup Peanut Butter
  • 2 bananas, sliced
  • 1/4 cup brown sugar
  • 1/2 cup chopped peanuts
  • 2 Tablespoons Maple syrup

Instructions: 
  • Heat oven to 425F.
  • Rub a little olive oil on each flatbread.
  • Bake on middle rack for 4-7 minutes, or until slightly crispy.
  • When flatbread is done, move rack to top position.
  • Spread peanut butter evenly over flatbreads, top with banana slices and sprinkle on brown sugar.
  • Return to oven for 2-5 minutes, or until heated through.
  • Remove from oven and top with bacon, peanuts and a drizzle of maple syrup.
  • Serve warm.
