Peanut Marshmallow Bars

Ingredients: 

Crust:
  • 1 pkg (18-1/4 oz) yellow cake mix
  • 2 Tablespoons water
  • 1/3 cup butter, softened
  • 1 egg
  • 4 cups miniature marshmallows
Topping:
  • 1 pkg (10 oz) peanut butter chips
  • 2/3 cup light corn syrup
  • 1/4 cup butter
  • 2 teaspoons vanilla extract
  • 2 cups rice krispies
  • 2 cups salted peanuts

Instructions: 
  • In a mixing bowl, beat the cake mix, water, butter and egg until blended (batter will be thick). Spread into a greased 13x9x2 inch pan. Bake at 350F for 22-25 minutes or until a toothpick inserted near the center comes out clean. Sprinkle with marshmallows. Bake 2 minutes longer. Place on a wire rack while preparing topping.
  • In a large saucepan, combine the peanut butter chips, corn syrup and butter; cook and stir over medium-low heat until melted and smooth. Remove from the heat; stir in vanilla, cereal and peanuts. Spread over marshmallows. Cool completely. Cut with a sharp knife.
