Penne alla Vodka

Serves 6

Ingredients: 
  • 3 tablespoons butter
  • 2 large garlic cloves, minced
  • 4 bacon strips, cut into small strips
  • 1 28-ounce can San Marzano peeled tomatoes
  • 1/2 cup heavy cream
  • 1/4 cup vodka
  • Salt & pepper
  • 1 pound penne pasta
  • 1/2 cup freshly grated Parmigiana cheese

Instructions: 
  • Bring a large pot of salted water to a boil.
  • Meanwhile, preheat a large skillet to medium heat. Add oil and bacon strips and cook until bacon is almost done (crispy).
  • Add garlic and cook for about 1 minute longer. 
  • Add tomatoes and cook  for about 5-10 minutes.  Mash occasionally with a potato masher to break up tomatoes into a thick sauce.
  • Add the cream and cook for about 2 minutes. Add the vodka and cook for another few minutes.  Add salt & pepper to taste and keep warm until pasta is done cooking. 
  • Add pasta to boiling water and cook according to package directions. 
  • When pasta is done, drain (reserve a bit of pasta water in case the sauce needs to be thinned a little).  Return pasta to the pot and mix in sauce mixture until well blended.  Add in the cheese and mix again.
  • Serve immediately!
