Pesto Linguine

DIETS: LC VG VT
Serves 5
Time: 30 Minutes

Ingredients: 
  • 3/4 cup fresh basil leaves
  • 4 cloves garlic, peeled
  • 3 Tablespoons pine nuts
  • 1/2 teaspoon salt
  • 5 Tablespoons olive oil
  • 1/2 cup freshly grated Parmesan cheese (regular or vegan)
  • freshly ground black pepper
  • 1 pound linguine

Instructions: 
  • Place basil, garlic, pine nuts, salt and olive oil in blender or food processor and process until smooth.  Remove to a bowl (or can freeze for later)
  • Stir in the cheese
  • Cook pasta in a large pan of rapidly boiling salted water until it is al dente.  Just before draining, take 1/4 cup of the cooking water and stir it into the sauce.
  • Drain the pasta and toss with the sauce, serve immediately.
