1 package (16oz) frozen broccoli, cauliflower and carrots (or vegetables of choice)
1/3 cup pesto (either homemade or store-bought)
2 Tablespoons grated Parmesan cheese (can use vegan Parmesan if desired)
Instructions:
Cook vegetables as directed on package; drain. Toss with pesto. Sprinkle with Parmesan cheese.
