Pesto Vegetables

SUPER EASY!
Serves 4

Ingredients: 
  • 1 package (16oz) frozen broccoli, cauliflower and carrots (or vegetables of choice)
  • 1/3 cup pesto (either homemade or store-bought)
  • 2 Tablespoons grated Parmesan cheese (can use vegan Parmesan if desired)

Instructions: 
  • Cook vegetables as directed on package; drain. Toss with pesto. Sprinkle with Parmesan cheese.
