Pork Scallopini

Serves 4
Time: 30 min

Ingredients: 
  • 1 lb pork tenderloin
  • 1 egg, slightly beaten
  • 2 Tablespoons water
  • 1/2 cup bread crumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon black pepper
  • 4 Tablespoons butter
  • 1 teaspoon cornstarch

Instructions: 
  • Cut pork into 1/2" slices.
  • Mix egg and 1 Tablespoon water in wide shallow bowl.
  • Mix bread crumbs, salt, onion powder, garlic powder and pepper in another wide shallow bowl.
  • Dip pork in egg mixture, then dip in crumb mixture.
  • Heat 2 Tablespoons butter in large skillet over medium heat until hot.  
  • Cook pork until done (3-5 min per side).  Remove from skillet and keep warm.
  • Add remaining 2 Tablespoons butter and wine to skillet and heat until boiling.
  • Mix cornstarch with 1 Tablespoon water and add to skillet.
  • Cook until slightly thickened (1-3 minutes).
  • Serve pork with sauce poured over the top.
