Mix egg, water and garlic powder in a shallow dish. Place crushed pretzels in a separate shallow dish. Coat pork with egg mixture, then dip in pretzels, covering all sides (press in to adhere as much as possible).
Add 2 Tablespoons butter and 2 Tablespoons oil to a large skillet and heat/melt over medium heat. Add pork and cook about 4-6 minutes until golden on bottom, then flip and cook for another 4-6 minutes until done. Remove from skillet and cover with foil to keep warm.
Make Sauce: Wipe out skillet and heat 2 Tablespoons oil over medium heat. Add garlic and saute for 30-60 seconds, until fragrant.
Stir in bouillon and water and simmer until reduced (2-3 minutes).
Turn off burner and add sour cream, mustard, 1 Tablespoon butter and stir until heated through. Season with salt/pepper, to taste.
