Pretzel Pork with Mustard Sauce

Ingredients: 
  • 4 boneless pork chops (about 1-inch thick)
  • 1 egg, slightly beaten
  • 2 Tablespoons water
  • 1/2 teaspoon garlic powder
  • 1/2 cup crushed pretzels
  • 3 Tablespoon butter, divided
  • 4 Tablespoons olive oil, divided
  • 2 large garlic cloves, minced
  • 2 teaspoon chicken bouillon (or Better-than-Bullion)
  • 1/2 cup water
  • 1/4 cup sour cream
  • 1 Tablespoons Dijon mustard
  • Salt/Pepper, to taste

Instructions: 
  • Trim fat from pork chops.
  • Mix egg, water and garlic powder in a shallow dish. Place crushed pretzels in a separate shallow dish.  Coat pork with egg mixture, then dip in pretzels, covering all sides (press in to adhere as much as possible).  
  • Add 2 Tablespoons butter and 2 Tablespoons oil to a large skillet and heat/melt over medium heat.  Add pork and cook about 4-6 minutes until golden on bottom, then flip and cook for another 4-6 minutes until done.  Remove from skillet and cover with foil to keep warm.
  • Make Sauce: Wipe out skillet and heat 2 Tablespoons oil over medium heat. Add garlic and saute for 30-60 seconds, until fragrant.  
  • Stir in bouillon and water and simmer until reduced (2-3 minutes).
  • Turn off burner and add sour cream, mustard, 1 Tablespoon butter and stir until heated through.  Season with salt/pepper, to taste.
