Quinoa Carbonara

This hearty bacon and quinoa skillet combines nutrient-rich quinoa, eggs, and onion into a comforting meal that's naturally satisfying and full of flavor. This version uses softly cooked chopped eggs instead of the traditional silky sauce.

DIETS: LC GF
Serves 2 as a main dish (4 as a side dish)
Time: 40 minutes

Ingredients: 
  • 4 slices bacon, chopped
  • 1 small onion, chopped
  • 2 cups water
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1 cup white quinoa, rinsed and drained
  • 3 large eggs

Instructions: 
  • In a large saucepan, cook the bacon over medium heat until crispy.  Remove the bacon, keeping the fat in the saucepan. 
  • Add the onion to the bacon fat and cook until soft and translucent (5-7 minutes).
  • Add the water, salt, garlic powder and quinoa to the pot and bring to a boil.
  • Reduce heat to medium-low, cover, and simmer until all the liquid is absorbed (about 20 minutes).
  • While the quinoa is cooking, beat eggs and add to a small skillet.  Cook until firm and cooked through. 
  • Remove eggs from skillet and chop into small pieces and set aside. 
  • When quinoa is finished cooking, add the cooked bacon and egg and mix well.
  • Serve!​
