Quinoa Oatmeal (V)

Serves 4

Ingredients: 
  • 4 cups water
  • 1/2 cup quinoa
  • 1 tsp olive or coconut oil
  • 1 cup steel-cut oats
  • Pinch of salt
  • Desired toppings: fruit, chocolate, brown sugar, nuts, almond milk, etc

Instructions: 
  • Heat water in a kettle on stovetop or microwave until near-boiling.  
  • Rinse and strain quinoa.
  • In saucepan, heat oil over med heat.  Add oats and toast for about 2 minutes.  Add quinoa and hot water and bring to a boil.
  • Turn down heat and simmer uncovered for 25-30 minutes.  
  • Mix in any desired add-ins
  • Good if stored in fridge for 1 week.

Topping Ideas: 
  • Smores: mini marshmallows, graham cracker crumbs & chocolate syrup
  • Banana Nut: sliced banana, maple syrup & chopped pecans
  • Any fruit, with any nut, with sweetener (maple syrup, agave nectar, honey, etc).
