Quinoa Salad (V, GF)

Serves 2
​From: The 21-Day Yoga Diet

Ingredients: 
  • 1 cup arugula/spinach
  • 1/2 cup cucumber, chopped
  • 1/2 ripe tomato, chopped
  • 1/4 onion, chopped
  • 1/2 cup leftover quinoa
  • 1/2 cup chickpeas, or other beans, rinsed and drained
  • 1/4 cup pitted Kalamata olives
  • 1/4 cup chopped parsley
  • 2 teaspoons olive oil
  • Squeeze of lime (or lemon)
  • salt & pepper to taste

Instructions: 
  • In a salad bowl, toss all ingredients.  Mix well and serve.
