Rice & Bean Burritos

Ingredients: 
  • 1 (10oz) can Enchilada Sauce
  • 1 cup uncooked instant white rice
  • 1/2 medium green bell pepper, cut into thin strips
  • 1 (16oz) can Vegetarian Refried Beans, heated
  • 4 (9-10") flour tortillas, heated
  • 1 medium tomato, chopped
  • 4oz (1 cup) shredded Cheddar cheese
  • 1/2 cup light sour cream

Instructions: 
In medium saucepan, bring enchilada sauce to a boil. Stir in rice and bell pepper. Cover; remove from heat. Let stand 5-10min or until liquid is absorbed. Fluff with fork.
Meanwhile, spread 1/4 of refried beans evenly over each warm tortilla to within 1" of edge.
Top each tortilla with 1/4 each of rice mixture, tomato and cheese. Spoon sour cream down center of each tortilla. Roll up.
