Roast Beef & Blue Cheese Wraps

Ingredients: 
  • 4 ounces cream cheese (softened)
  • 2 Tablespoons mayo
  • 2 ounces blue cheese crumbles
  • 1/2 teaspoon season salt
  • Black pepper, to taste
  • 4- 8 inch tortillas
  • 1/2 pound thin deli roast beef
  • 1/2 cup roasted red pepper, sliced (or 1 red pepper, sliced and pan fried in oil)
  • 1 1/2 cups chopped romaine hearts

Instructions: 
  • Mix cream cheese, mayo, blue cheese, salt & pepper in a bowl.  Mix with hand mixer to smooth out, if desired.
  • Spread cream cheese mixture on top of tortillas (leave 1/2" around the edges).
  • Top with roast beef, peppers and lettuce.
  • Roll up, burrito-style, as tightly as possible.
  • Serve immediately, or roll in plastic wrap and refrigerate until ready to serve.  
  • *Can also roll up tightly, refrigerate to set, and slice into spiral rounds for appetizers*
