1/2 cup roasted red pepper, sliced (or 1 red pepper, sliced and pan fried in oil)
1 1/2 cups chopped romaine hearts
Instructions:
Mix cream cheese, mayo, blue cheese, salt & pepper in a bowl. Mix with hand mixer to smooth out, if desired.
Spread cream cheese mixture on top of tortillas (leave 1/2" around the edges).
Top with roast beef, peppers and lettuce.
Roll up, burrito-style, as tightly as possible.
Serve immediately, or roll in plastic wrap and refrigerate until ready to serve.
*Can also roll up tightly, refrigerate to set, and slice into spiral rounds for appetizers*
