Roasted Brussels Sprouts

DIETS: LC GF VG VT
Serves 4

Ingredients: 
  • 16 ounces fresh Brussels sprouts, halved (or quartered, depending on size)
  • 1/4 cup good quality olive oil
  • salt & pepper to taste
  • Can also add 1 Tablespoon balsamic vinegar for every 2 cups of sprouts for a tangy variation

Instructions: 
  • Preheat oven to 425F and place oven rack in top position (can roast at different temps if desired, adjust cooking times up and down accordingly)
  • Can also do this in an air fryer @ 400F
  • Place vegetables, olive oil and salt/pepper in a medium bowl and mix well
  • Place on a baking sheet in a single layer
  • Roast for 15-25 minutes in oven (10-12 minutes in air fryer), stirring half-way through baking time
  • Serve!​
