Ingredients:
2 large sweet potatoes, peeled and cut into 1/2" cubes
1/3 cup olive oil
1/3 cup balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup cilantro, chopped
1 Tablespoons honey
2 small chipotle peppers in adobo sauce, minced
Instructions:
Preheat oven to 400F
Put sweet potatoes on greased cookie
Drizzle with the 3 Tablespoons olive oil, 3 Tablespoons balsamic vinegar, salt and pepper and toss to coat
Roast for 25-30 minutes, or until tender and browned
Meanwhile, mix remaining olive oil, balsamic, cilantro, honey and chipotle peppers in medium bowl
When vegetables are done, add to the bowl with the dressing and toss to coat
Serve immediately
