Roasted Chipotle Sweet Potatoes

Sweet potatoes are considered a "superfood" because they can lower your risk for cancer, help control blood sugar, lower risk for heart disease, macular degeneration and obesity.

Ingredients: 
  • 2 large sweet  potatoes, peeled and cut into 1/2" cubes
  • 1/3 cup olive oil
  • 1/3 cup balsamic vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup cilantro, chopped
  • 1 Tablespoons honey
  • 2 small chipotle peppers in adobo sauce, minced

Instructions: 
  • Preheat oven to 400F
  • Put sweet potatoes on greased cookie
  • Drizzle with the 3 Tablespoons olive oil, 3 Tablespoons balsamic vinegar, salt and pepper and toss to coat
  • Roast for 25-30 minutes, or until tender and browned
  • Meanwhile, mix remaining olive oil, balsamic, cilantro, honey and chipotle peppers in medium bowl
  • When vegetables are done, add to the bowl with the dressing and toss to coat
  • Serve immediately
