Ingredients:
1 large head cauliflower, cut into florets
1/4 cup olive or avocado oil
1 clove garlic, minced
1.5 teaspoons ground cumin
1.5 teaspoons ground coriander
1 teaspoon ground turmeric
1.5 teaspoons smoked paprika
1/2 teaspoon ground cardamom
1/2 teaspoon cinnamon
1 Tablespoon lemon juice, fresh
1 teaspoon salt
1/2 teaspoon black pepper
Parsley or cilantro for garnish, if desired
Instructions:
Preheat oven to 400F.
Put cauliflower in a large bowl.
Make the spiced oil by mixing all remaining ingredients (except garnishes) in a separate small bowl.
Pour the spiced oil mix over the cauliflower and toss to combine. Let sit for at least 15 minutes (or can let marinate overnight if desired).
Spread out into a single layer on a large baking tray and roast for 30-35 minutes, stirring half-way.
Remove and sprinkle with parsley or cilantro if desired.
