DIETS: LC Serves 6 Time: Approximately 20 minutes.
Ingredients:
1 pound short pasta (rotini, penne, etc)
1 package (4oz) hard salami, sliced into bit-sized pieces
2 large tomatoes, chopped
4 cloves fresh garlic, finely chopped
1/2 cup fresh basil, chopped
4 Tablespoons olive oil
2 Tablespoons Dijon mustard
1 cup freshly shredded Parmesan cheese
Salt & Pepper, to taste
Instructions:
Bring a large pot of salted water to a boil.
Add the pasta and cook according to package directions.
Meanwhile, Add all other ingredients to a large bowl and mix well.
When pasta is done, drain and add it to the bowl. Mix well.
Serve immediately.
