Salami Pasta

DIETS: LC
Serves 6
Time: Approximately 20 minutes. 

Ingredients: 
  • 1 pound short pasta (rotini, penne, etc)
  • 1 package (4oz) hard salami, sliced into bit-sized pieces
  • 2 large tomatoes, chopped
  • 4 cloves fresh garlic, finely chopped
  • 1/2 cup fresh basil, chopped
  • 4 Tablespoons olive oil
  • 2 Tablespoons Dijon mustard
  • 1 cup freshly shredded Parmesan cheese
  • Salt & Pepper, to taste

Instructions: 
  • Bring a large pot of salted water to a boil.
  • Add the pasta and cook according to package directions. 
  • Meanwhile, Add all other ingredients to a large bowl and mix well.  
  • When pasta is done, drain and add it to the bowl.  Mix well. 
  • Serve immediately.
