Ingredients:
3 Tablespoons olive oil, divided
2 pounds Italian sausage (about 10 links), cut into bite-size pieces
1 yellow onion, sliced into long strips
1 red pepper, sliced into long strips
1 green pepper, sliced into long strips
1 yellow pepper, sliced into long strips
1-15 ounce can tomato sauce (low carb)
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon apple cider vinegar
Instructions:
Heat 1 Tablespoon olive oil over med-high heat in large skillet. Cook Italian sausage until cooked through, then remove from pan and set aside.
Add remaining 2 Tablespoons olive oil to same skillet and heat over med-high heat. Add onion and peppers and saute until tender (5-10 minutes).
Add sausage and all remaining ingredients back into skillet and cook until warmed through and combined (about 5-10 minutes).
Remove from pan and serve.
