DIETS: VT Serves about 5 Time: about 80 minutes Double the recipe for a 9x13" pan
Ingredients:
3 medium-sized potatoes, peeled and sliced thin (about 1/8")
2 Tablespoons butter
1 1/2 Tablespoons flour
3/4 cup whole milk
3/4 cup heavy cream
2 garlic cloves, minced
1/2 teaspoon freshly grated nutmeg
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup shredded Parmesan cheese
1/2 cup grated Gruyere cheese
Variations:
If buttery-crumbed topping is desired, omit the Gruyere cheese and replace with 2 Tablespoon melted butter and 1/2 cup plain breadcrumbs.
To make it a meal, add meat! 1/2 - 3/4 pound cubed ham or sliced kielbasa works well.
Instructions - Oven:
Preheat oven to 400F.
Grease a 1 1/2-quart or 8x8" square baking dish and set aside.
Bring a large saucepan of salted water to a boil. Add potatoes and boil for 5 minutes. Drain and set aside.
In a medium saucepan, melt butter over medium heat and add flour. Whisk until well blended and bubbly.
Whisk in milk, cream, garlic, nutmeg, mustard, salt & pepper and heat over medium heat warm and thickened (5-8 minutes).
Remove from heat - mix in Parmesan cheese.
Layer 1/2 of the potato mixture into the prepared pan (layering and overlapping slices). Top with 1/2 of the meat (if using) and then pour 1/2 of the sauce over the top. Repeat with remaining potatoes, meat (if using) and Sauce.
If using cheese topping, sprinkle Gruyere over the top. If using breadcrumb topping, mix butter and breadcrumbs together and sprinkle over the top.
Bake, uncovered, for approximately 35 minutes, or until potatoes are tender and bubbling and top is browned.
Instructions - Air Fryer:
Grease a shallow air fryer pan.
In a medium saucepan, melt butter over medium heat and add flour. Whisk until well blended and bubbly.
Whisk in milk, cream, garlic, nutmeg, mustard, salt & pepper and heat over medium heat warm and thickened (5-8 minutes).
Remove from heat - mix in Parmesan cheese and raw potatoes (no need to pre-cook them) and mix until combined.
Pour into air fryer pan.
Air fry at 390F for 10 minutes. Sprinkle the Gruyere or breadcrumb mixture on top and continue frying until bubbly and top is browned, about 5 minutes.
