Scotch Eggs

Great dipped in a creamy mustard/mayo sauce, ranch or chipotle ranch dressing!

Time: 40 Minutes

Ingredients: 
  • 8 ounces (1 cup) ground Italian sausage
  • 1 teaspoon fresh thyme, minced
  • 1 teaspoon fresh parsley, minced
  • Vegetable oil for frying
  • 6 hard boiled eggs
  • 1 egg, beaten
  • 2/3 cup fresh bread crumbs
 
Instructions: 
  • In a medium bowl, combine sausage, thyme and parsley and mix well.
  • Heat 1.5 inches of oil in a deep skillet to 375F (or use a deep fryer). 
  • Tightly press a 1/4" thick layer of the sausage around each egg.
  • Dip each sausage covered egg in the beaten egg, then roll in the bread crumbs to coat.
  • Lower eggs into the oil and fry until golden brown (about 2 minutes each side).  If using a deep fryer, fry for 2.5 - 3 minutes.
  • Transfer the eggs to a paper towel-lined plate to drain.
  • Serve!
