Great dipped in a creamy mustard/mayo sauce, ranch or chipotle ranch dressing! DIETS: KT Servings: 6 Time: 40 Minutes
Ingredients:
8 ounces (1 cup) ground Italian sausage
1 teaspoon fresh thyme, minced
1 teaspoon fresh parsley, minced
Vegetable oil for frying
6 hard boiled eggs
1 egg, beaten
2/3 cup fresh bread crumbs
Instructions:
In a medium bowl, combine sausage, thyme and parsley and mix well.
Heat 1.5 inches of oil in a deep skillet to 375F (or use a deep fryer).
Tightly press a 1/4" thick layer of the sausage around each egg.
Dip each sausage covered egg in the beaten egg, then roll in the bread crumbs to coat.
Lower eggs into the oil and fry until golden brown (about 2 minutes each side). If using a deep fryer, fry for 2.5 - 3 minutes.
Transfer the eggs to a paper towel-lined plate to drain.
Serve!
