Shirred Eggs

Serves 2

Ingredients: 




     
  • 1 Tablespoon butter
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme
  • 1 teaspoon fresh rosemary, chopped
  • 1 cup bread, cubed
  • 2 Tablespoons olive oil
  • 1 cup spinach, chopped
  • 4 eggs
  • Salt & Pepper to taste

Instructions: 
  • Preheat oven to 400F.
  • Melt the butter and use to grease 2 ramekins, or 1 small casserole dish.
  • Mix cream, 1/2 the garlic,  thyme, rosemary, and salt/pepper to taste in a small saucepan.  
  • Bring to a boil and then reduce heat to med-low.  Cook for 7-10 minutes, or until reduced to about half. 
  • Meanwhile, heat olive oil over med-high heat in medium sized fry pan.  Add  bread cubes, the rest of the garlic and salt/pepper to taste and fry until browned and crispy (about 5 min).  Remove from heat.
  • Add the below to the casserole dish.  If using ramekins - put half in each. 
  • Add spinach to the bottom.  Break eggs and add to top of spinach. 
  • Add croutons on top of eggs.  
  • Add cream to cover everything. 
  • Bake for 12- 15 minutes until eggs are done to your liking. 
  • Server immediately.
