Melt the butter and use to grease 2 ramekins, or 1 small casserole dish.
Mix cream, 1/2 the garlic, thyme, rosemary, and salt/pepper to taste in a small saucepan.
Bring to a boil and then reduce heat to med-low. Cook for 7-10 minutes, or until reduced to about half.
Meanwhile, heat olive oil over med-high heat in medium sized fry pan. Add bread cubes, the rest of the garlic and salt/pepper to taste and fry until browned and crispy (about 5 min). Remove from heat.
Add the below to the casserole dish. If using ramekins - put half in each.
Add spinach to the bottom. Break eggs and add to top of spinach.
Add croutons on top of eggs.
Add cream to cover everything.
Bake for 12- 15 minutes until eggs are done to your liking.
Server immediately.
