Shredded Chicken Tacos

Servings: 6
Time: 1 hour

Ingredients: 
  • 1 - 12oz bag shredded coleslaw mix
  • 1/2 cup mayo
  • 1 Tablespoon plus 1/4 cup pure maple syrup
  • 2 teaspoons freshly squeezed lemon or lime juice
  • 1 teaspoon white vinegar
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 5-6 cups cooked shredded chicken
  • 1/4 cup pure maple syrup
  • 1/4 cup Dijon mustard
  • 1/4 cup honey
  • 2 Tablespoons Worcestershire sauce
  • 2 Tablespoons apple cider vinegar
  • 1 Tablespoon Frank's Red Hot sauce
  • 1 teaspoon liquid smoke
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 12  flour tortillas

Instructions: 
  • Make the Slaw by combining the coleslaw, mayo, 1 Tablespoon maple syrup, lemon/lime juice, white vinegar, paprika, salt & pepper in a large bowl and mixing well.  Cover and store in the fridge until ready to use.
  • Make the sauce by whisking 1/4 cup maple syrup, mustard, honey, Worcestershire, cider vinegar, hot sauce, liquid smoke, onion powder & garlic powder in a large saucepan.
  • Heat until warmed, then add the chicken and mix to combine.   
  • Divide chicken among 12 tortillas and top with slaw.
