2/3 cup milk or milk alternative (almond milk, etc)
1 tomato, chopped
1/2 teaspoon garlic powder
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
1/2 cup chicken or vegetable broth
Salt & Pepper, to taste
1lb raw shrimp, peeled, de-veined and tail removed
Instructions:
Cook bacon until crisp, let cool. Crumble and set aside.
Cook fettuccine according to package directions, reserving 1 cup of the pasta water when done.
While fettuccine is cooking, heat 1 tablespoon butter and 1 tablespoon olive oil in large skillet on med-high heat.
Add mushrooms and sauté until lightly browned (about 5 min).
Add cream cheese, milk, tomato, seasonings and broth and cook on medium heat until cream cheese melts and everything is heated through.
While the sauce cooks, melt 1 tablespoon butter and 1 tablespoon olive oil over med-high heat in a separate large skillet.
Add shrimp and sauté until done (2-3 minutes per side). Remove from heat and set aside.
Drain fettuccine, reserving about 1 cup of the water.
Add fettuccine, bacon & shrimp to sauce mixture and mix everything together. Add pasta water as needed if too dry.
Salt & Pepper to taste & serve immediately!
