Shrimp & Bacon Fettuccine

Makes 6 Servings
Time: 1 hour

Ingredients: 
  • 1lb bacon, cooked and crumbled
  • 1-16oz package fettuccine (uncooked)
  • 2 Tablespoons butter
  • 2 Tablespoons olive oil
  • 1 cup mushrooms, sliced
  • 1-8oz package cream cheese
  • 2/3 cup milk or milk alternative (almond milk, etc)
  • 1 tomato, chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried basil
  • 1/2 cup chicken or vegetable broth
  • Salt & Pepper, to taste
  • 1lb raw shrimp, peeled, de-veined and tail removed

Instructions: 
  • Cook bacon until crisp, let cool.  Crumble and set aside.
  • Cook fettuccine according to package directions, reserving 1 cup of the pasta water when done. 
  • While fettuccine is cooking, heat 1 tablespoon butter and 1 tablespoon olive oil in large skillet on med-high heat. 
  • Add mushrooms and sauté until lightly browned (about 5 min).  
  • Add cream cheese, milk, tomato, seasonings and broth and cook on medium heat until cream cheese melts and everything is heated through.  
  • While the sauce cooks, melt 1 tablespoon butter and 1 tablespoon olive oil over med-high heat in a separate large skillet.  
  • Add shrimp and sauté until done (2-3 minutes per side). Remove from heat and set aside.
  • Drain fettuccine, reserving about 1 cup of the water.  
  • Add fettuccine, bacon & shrimp to sauce mixture and mix everything together.  Add pasta water as needed if too dry. 
  • Salt & Pepper to taste & serve immediately!
