Shrimp & Rice Bowl

Serves: 4
Time: 30 Minutes

Ingredients: 
  • 1 pound peeled and de-veined shrimp
  • 1 teaspoon grated and peeled fresh ginger
  • 3 Tablespoons dark sesame oil
  • 1/2 cup sliced green onions
  • 1 Tablespoon minced garlic (fresh or bottled)
  • 4 cups frozen cauliflower rice, cooked (plain, lemon/garlic or mixed with broccoli rice all work!)
  • 2 eggs, lightly beaten
  • 2 Tablespoons tamari or soy sauce
  • 1/4 cup chopped peanuts
 
Instructions: 
  • Mix shrimp and ginger in a large bowl and let it marinate for 5-10 minutes.
  • Heat the sesame oil in a large skillet over medium-high heat and add green onions. Saute for 1-2 minutes until tender.
  • Add shrimp and sauté for 4-5 minutes or until done.
  • Add cooked cauliflower rice and cook until warmed through. Push everything to 1 side of the pan and add the beaten eggs. Cook for 30 seconds, then mix into the rice mixture and continue cooking until eggs are done.
  • Add the tamari/soy sauce and mix well. Continue cooking until everything is hot. Remove from heat and top with chopped peanuts.
