4 cups frozen cauliflower rice, cooked (plain, lemon/garlic or mixed with broccoli rice all work!)
2 eggs, lightly beaten
2 Tablespoons tamari or soy sauce
1/4 cup chopped peanuts
Instructions:
Mix shrimp and ginger in a large bowl and let it marinate for 5-10 minutes.
Heat the sesame oil in a large skillet over medium-high heat and add green onions. Saute for 1-2 minutes until tender.
Add shrimp and sauté for 4-5 minutes or until done.
Add cooked cauliflower rice and cook until warmed through. Push everything to 1 side of the pan and add the beaten eggs. Cook for 30 seconds, then mix into the rice mixture and continue cooking until eggs are done.
Add the tamari/soy sauce and mix well. Continue cooking until everything is hot. Remove from heat and top with chopped peanuts.
