Shrimp Fajita's with Black Beans & Rice

Servings: 3
Time: 1 hour

Ingredients: 
  • 2 Tablespoons Olive oil, divided
  • 1 onion, diced & divided
  • 2 garlic cloves, minced
  • 1 Tablespoon plus 2 teaspoons chili powder
  • 1 bay leaf
  • 1 can black beans, rinsed & drained
  • 1 tomato, diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup water
  • 1 Box mix of Spanish Rice
  • 1 teaspoon garlic salt
  • 1 Tablespoon Lime juice
  • 1 pound raw shrimp, peeled and de-veined
  • 1 red pepper, thinly sliced
  • 1 orange pepper, thinly sliced
  • 1 jalapeno pepper, minced
  • 2 Tablespoons Cilantro
  • 6 Flour tortillas
  • Thousand Island Dressing
  • Toppings of choice: Cheese, Sour Cream, Lettuce, Avocado, Tomatoes, etc

Instructions: 
  • Make beans by heating 1 Tablespoon olive oil in large skillet over medium heat. Add 1/2 the onion and sauté until tender.  Add garlic and sauté for an additional 1-2 minutes. Stir in 2 teaspoons chili powder and bay leaf. Cook another 3 min. Add beans, tomato, salt, pepper and water. Bring to a boil. Reduce heat and simmer while you prepare the remaining elements.
  • Make rice according to package directions and keep warm.
  • In medium bowl, whisk 1 Tablespoon chili powder, garlic salt, 1 Tablespoon olive oil and lime juice. Add shrimp, toss to coat. Let marinade for 10 min.
  • Heat large skillet or griddle over medium-high heat. Spray with nonstick cooking spray. Add peppers and remaining onion. Sauté until tender (7-8 min). Transfer to a bowl and cover with foil to keep warm.
  • In same skillet, add shrimp with marinade. Cook until done (about 6-10 min).
  • Assemble fajitas by topping each tortilla with shrimp mixture, then rice, then beans (or can mix rice and beans and serve on the side instead).  Drizzle with Thousand Island dressing,  add toppings of choice and sprinkle with cilantro.
