Snickerdoodle Cheesecake

Ingredients: 
  • 2 8-oz packages cream cheese
  • 3 eggs, lightly beaten
  • 1 10-oz package shortbread cookies, finely crushed
  • 1 cup plus 2 Tablespoons sugar (divided)
  • 1/4 cup butter, melted
  • 1 8-oz carton sour cream
  • 2 Tablespoons flour
  • 2 1/2 teaspoons vanilla
  • 2 teaspoons ground cinnamon (divided)

Instructions: 
  • Let cream cheese and eggs come to room temperature (about 30 minutes).
  • Preheat oven to 350F.
  • Make crust by mixing cookies and 1 tablespoon sugar in a medium bowl.  Add the melted butter and mix until combined.  Press into the bottom and up 1 1/2" on the sides of 9" springform pan.
  • In a large bowl, beat cream cheese, sour cream, 1 cup sugar, flour, vanilla and 1 teaspoon cinnamon.  Mix until smooth. Stir in eggs by hand until combined.  Spread on top of crust and spread out evenly.
  • In a small bowl, stir together 1 Tablespoon sugar and 1 teaspoon cinnamon.  Sprinkle mixture evenly over the cream cheese mixture in the pan.
  • Place springform pan in a shallow baking pan and bake for 40-50 minutes or until a couple of inches around the outside edge appears set when gently shaken.  
  • Cool in the pan on a wire rack for 15 minutes.  Then loosen the crus from the sides of the pan by running a knife along the edge.  Cool 30 minutes more, then remove sides of pan.  Cool completely on wire rack (about 1-2 hours).  
  • Cover and chill at least 4 hours before serving.
