Let cream cheese and eggs come to room temperature (about 30 minutes).
Preheat oven to 350F.
Make crust by mixing cookies and 1 tablespoon sugar in a medium bowl. Add the melted butter and mix until combined. Press into the bottom and up 1 1/2" on the sides of 9" springform pan.
In a large bowl, beat cream cheese, sour cream, 1 cup sugar, flour, vanilla and 1 teaspoon cinnamon. Mix until smooth. Stir in eggs by hand until combined. Spread on top of crust and spread out evenly.
In a small bowl, stir together 1 Tablespoon sugar and 1 teaspoon cinnamon. Sprinkle mixture evenly over the cream cheese mixture in the pan.
Place springform pan in a shallow baking pan and bake for 40-50 minutes or until a couple of inches around the outside edge appears set when gently shaken.
Cool in the pan on a wire rack for 15 minutes. Then loosen the crus from the sides of the pan by running a knife along the edge. Cool 30 minutes more, then remove sides of pan. Cool completely on wire rack (about 1-2 hours).
Cover and chill at least 4 hours before serving.
