Southwest Chicken ala King

Serves 4
Time: 40 Minutes

Ingredients: 
  • 4 Tablespoons butter, divided
  • 1/2 cup green pepper, chopped
  • 1/2 cup red pepper, chopped
  • 1/2 cup green onions, chopped
  • 1/4 cup flour
  • 2 teaspoons chili powder
  • 1/2 teaspoon ground cumin
  • 1 1/4 cups milk (approximately)
  • 1/2 cup chicken broth
  • 2 cups cooked chicken, shredded
  • 1/2 cup frozen or canned corn
  • 1/2 cup sour cream
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 8 baked biscuits or slices of toasted bread, 3 cups cooked brown rice or 4 baked puff pastry cups

Instructions: 
  • Melt 1 Tablespoon of the butter in a medium saucepan over medium heat and add the peppers and onions and cook until softened (about 5-8 min).  Remove from pan and set aside.
  • Melt remaining 3 Tablespoons butter in the same saucepan over medium heat.  Add flour and chili powder and cumin and cook for about 5 minutes (until bubbly and thick). 
  • Add milk and broth and whisk constantly until mixture thickens (3-5 min).
  • Add chicken, pepper & onion  mixture and corn and cook until heated through.
  • Turn off heat and mix in sour cream and keep on burner until heated through (but do NOT let it boil).
  • Add salt and pepper and serve with biscuits, bread, rice or puff pastry cups
