In a large saucepan, combine the soy sauce and water and bring to a simmer over medium heat. Add the salt, five-spice, ginger, scallion and garlic and simmer for 5 minutes.
Remove from heat and set aside.
In an air-tight container, place the eggs and pour the marinade over the top.
Seal and refrigerate overnight.
Keep refrigerated (either drained or in the marinade) and use within 4 days.
