Soy Eggs

These aromatic soy sauce eggs are a protein-packed delight, combining the nutritional power of hard-boiled eggs with the warm, complex flavors of Chinese five-spice, fresh ginger, and garlic for a savory snack or meal addition that's as nourishing as it is delicious.
Servings: 6
Time: 25 minutes (plus marinade time)

Ingredients: 
  • 6 hard-boiled eggs, peeled (recipe here if needed)
  • 1 cup soy sauce
  • 3 cups water
  • 1 teaspoon salt
  • 1 teaspoon Chinese five-spice powder
  • 1 inch slice of ginger, peeled and smashed
  • 1 scallion, chopped into 2" sections
  • 2 garlic cloves, peeled and smashed

Instructions:  
  • In a large saucepan, combine the soy sauce and water and bring to a simmer over medium heat.  Add the salt, five-spice, ginger, scallion and garlic and simmer for 5 minutes.
  • Remove from heat and set aside. 
  • In an air-tight container, place the eggs and pour the marinade over the top.   
  • Seal and refrigerate overnight.  
  • Keep refrigerated (either drained or in the marinade) and use within 4 days.
