Spicy Asian Coleslaw

Servings: 6
Time: 30 minutes (plus chilling overnight)

​Ingredients: 
  • 1 1/2 Tablespoon sugar
  • 1 1/2 Tablespoon rice vinegar
  • 3/4 teaspoon salt
  • 3/4 teaspoon pepper
  • 3 Tablespoons olive oil
  • 3 teaspoons sesame oil
  • 1 1/2 teaspoon hot chili oil
  • 1 - 14oz bag of coleslaw mix
  • 3/4 cup green onion, chopped
  • 1 - 3 oz package chicken flavored ramen noodles (with seasoning packet)
  • 1/2 cup slivered almonds
  • 1 1/2 Tablespoons sesame seeds

Instructions: 
  • Make dressing by whisking together sugar, vinegar, salt, pepper, oils and ramen seasoning packet.
  • Add the slaw mix and onion to a large bowl. Mix well.
  • Add the dressing to the slaw mix (if the dressing separates, stir well right before adding, then pour it on quickly).
  • Mix well and refrigerate for 1-2 hours (or overnight). 
  • Right before serving, add the ramen noodles (break into chunks first), nuts and seeds.
  • Add additional Salt/pepper, to taste
