Spicy Breakfast Burritos

Servings: 8
Time: 40 Minutes

Ingredients: s
  • 12 eggs
  • 1/4 cup butter
  • 1 poblano pepper, chopped
  • 1 jalapeno pepper, chopped
  • 1 onion, chopped
  • 1/2 pound ground Italian sausage
  • 1/2 teaspoon chili powder
  • 1 - 4.5 ounce can chopped green chilies, drained
  • 1/2 teaspoon salt
  • 8 - 8 inch tortillas
  • 1/2 cup shredded cheddar cheese
  • Salsa, sour cream, guacamole/avocado and/or cilantro for garnishing

Instructions: 
  • Crack eggs into a large bowl and whisk until yolks are broken.
  • Melt butter in a large skillet.
  • Add peppers and onion and saute until softened.
  • Add sausage, chili powder and chilies and cook until sausage is browned.
  • Add egg mixture & salt and stir until eggs are done.
  • Spoon egg mixture over tortillas, top with cheese and roll up burrito-style.
  • Top with garnishes of choice and serve!
