Spicy Corn Cakes

Ingredients: 
  • 1 cup corn
  • 2 Tablespoons flour
  • 1 Tablespoons cornmeal
  • 1/2 Tablespoon onion, chopped
  • 1/2 Tablespoon fresh basil, chopped
  • Pinch baking soda
  • Pinch baking powder
  • 1 egg
  • 1 teaspoons buttermilk
  • 1 teaspoons butter, melted
  • Olive oil
  • 2 Tablespoons tomato, chopped
  • 2 Tablespoons avocado, diced
  • 1/2 Tablespoon cilantro, chopped
  • salt & pepper

Instructions: 
  • Pulse the corn kernels in a blender.
  • In a bowl, mix kernels with flour, cornmeal, onion, basil, baking powder, baking soda and salt/pepper; set aside.
  • In small bowl whisk egg, buttermilk and melted butter, then add to cornmeal mixture.
  • Heat skillet with drizzle of olive oil. Add batter and cook each side until brown and cooked through. Served topped with tomato, avocado and cilantro. Salt & Pepper to taste.
