Spicy Sausage Penne

Servings: 6
Time: 45 minutes

Ingredients: 
  • 2 Tablespoons olive oil
  • 1 lb ground Italian sausage
  • 2 cloves garlic, finely chopped
  • 1 onion, chopped
  • 2 jalapeno peppers, seeded and finely chopped
  • 28oz can San Marzano tomatoes (peeled/whole)
  • 2 scallions, chopped
  • 2 teaspoons Italian seasoning
  • 2 teaspoons Mesa Rosa Chipotle seasoning
  • Salt/Pepper, to taste
  • 1 lb penne pasta
  • Freshly grated Parmesan for garnish, if desired

Instructions: 
  • Heat oil in a large skillet over medium-high heat.  Add sausage, garlic, onion & jalapenos and fry until sausage is cooked through and onion and peppers are tender (7-10 min).
  • Add tomatoes in their sauce, scallions, Italian & Mesa Rosa Seasoning and mix well.  
  • Reduce heat to medium-low and simmer gently for 20 minutes, using a potato masher to break up the whole tomatoes. Season with salt/pepper, to taste.
  • While sauce is simmering, bring a large pot of salted water to a boil and cook pasta according to package instructions (try to time it out so the pasta and sauce are done at the same time).  
  • Drain pasta and add to skillet with sauce.  Gently toss to coat the pasta in the sauce.
  • Top with freshly grated Parmesan, if desired.  Serve immediately!
