Heat oil in a large skillet over medium-high heat. Add sausage, garlic, onion & jalapenos and fry until sausage is cooked through and onion and peppers are tender (7-10 min).
Add tomatoes in their sauce, scallions, Italian & Mesa Rosa Seasoning and mix well.
Reduce heat to medium-low and simmer gently for 20 minutes, using a potato masher to break up the whole tomatoes. Season with salt/pepper, to taste.
While sauce is simmering, bring a large pot of salted water to a boil and cook pasta according to package instructions (try to time it out so the pasta and sauce are done at the same time).
Drain pasta and add to skillet with sauce. Gently toss to coat the pasta in the sauce.
Top with freshly grated Parmesan, if desired. Serve immediately!
