Spicy Shrimp Ramen

Ingredients:
  • 2 cups broccoli, chopped into bite-size pieces
  • Olive oil, salt & pepper
  • 2 cups water
  • 2 Tablespoon tamari/soy sauce
  • 1 teaspoon ground ginger
  • 1/2 teaspoon crushed red pepper
  • 1/4 teaspoon garlic powder
  • 2 - 3 oz packages ramen (oriental or chicken flavor)
  • 1 pound medium shrimp, shelled and deveined
  • 4 green onions, chopped

Instructions:
  • Preheat oven to 425F.
  • Place broccoli on cookie sheet, drizzle with olive oil, sprinkle with salt and pepper and back for 15-20 minutes.
  • When broccoli has about 5 minutes left, make the noodles by mixing water, tamari/soy sauce, ginger, pepper, garlic powder and 1/2 of 1 seasoning packet (save the rest for another use) in a large skillet of medium-high heat.  Bring to a boil.
  • Add the noodles, shrimp and green onions and return to a boil.  Reduce heat to medium-low and cook 5 minutes or until shrimp are pink and opaque and noodles are tender (stir occasionally to break up noodles).
  • When done, add the broccoli and mix well.
  • Serve warm.
