Spinach & Strawberry Salad

DIETS: LC GF VG VT
Serves 8

Ingredients: 
  • 12 oz fresh spinach
  • 2 Tablespoons sesame seeds
  • 1/4 cup safflower oil
  • 2 Tablespoons salad vinegar
  • 1 Tablespoon sugar
  • 2 Tablespoons minced green onions
  • 1 teaspoon salt
  • dash pepper
  • dash Tabasco sauce
  • 1 pint strawberries, sliced

Instructions: 
  • Wash, trim and dry spinach; refrigerate.
  • Toast sesame seeds in a hot fry pan until golden (just a few minutes).
  • Combine oil, vinegar, sugar, onions, salt, pepper and Tabasco sauce in tightly covered container; shake until sugar and salt are dissolved. Refrigerate.
  • To serve: Combine spinach with sesame seeds in salad bowl. Toss with dressing; gently toss in strawberries.
