Ingredients:
10 ounces fresh spinach, rinsed and torn into bite-size pieces
2 eggs, hard-boiled, shelled and chopped
8 Tablespoons olive oil, divided
6 slices bacon, cut into strips
10 ounces mushrooms, cut into strips
1.5 Tablespoons honey mustard
1.5 Tablespoons vinegar
Salt/pepper, to taste
Instructions:
Place spinach & hard-boiled eggs in a large bowl
Prepare the dressing by whisking together 6 Tablespoons olive oil, mustard, vinegar and salt/pepper
Pour dressing over spinach mixture and mix well
Fry the bacon strips in the 2 remaining Tablespoons of olive oil for 3-4 minutes. Add the mushrooms and sauté another 3-4, or until bacon is crispy and mushrooms are tender.
Sprinkle fried bacon & mushroom mixture on top
Serve immediately
