Spinach, Mushroom & Bacon Salad

Time: 20 minutesSpinach is rich in iron, vitamin C and E, potassium, and magnesium. As part of a nutritious diet, it can help support immune function, aid the digestive system, may even have anticancer properties.


Ingredients: 
  • 10 ounces fresh spinach, rinsed and torn into bite-size pieces
  • 2 eggs, hard-boiled, shelled and chopped
  • 8 Tablespoons olive oil, divided
  • 6 slices bacon, cut into strips
  • 10 ounces mushrooms, cut into strips
  • 1.5 Tablespoons honey mustard
  • 1.5 Tablespoons vinegar
  • Salt/pepper, to taste


Instructions: 
  • Place spinach & hard-boiled eggs in a large bowl
  • Prepare the dressing by whisking together 6 Tablespoons olive oil, mustard, vinegar and salt/pepper
  • Pour dressing over spinach mixture and mix well
  • Fry the bacon strips in the 2 remaining Tablespoons of olive oil for 3-4 minutes.  Add the mushrooms and sauté another 3-4, or until bacon is crispy and mushrooms are tender. 
  • Sprinkle fried bacon & mushroom mixture on top
  • Serve immediately
