Spinach Pasta (V)

Serves 2

Ingredients: 
  • 1.5 cups pasta
  • 1 Tablespoon Olive Oil
  • 3 medium garlic cloves, minced
  • 2 large handfuls spinach, chopped
  • 4 mushrooms, if desired
  • 1 can pink/red beans, drained and rinsed
  • Salt & Pepper
  • Parmesan Cheese for garnish (optional)

Instructions: 
  • Cook the pasta in boiling water according to package directions.
  • Meanwhile, heat the olive oil in skillet over medium heat. Add garlic and cook about 1 minute.
  • Raise heat to medium-high and add spinach until wilted, about 5 minutes.
  • Stir in the beans, 1/4-1/2 cup of the pasta water, and mushrooms, heat 2-3 minutes.
  • Drain pasta and add to skillet, mix with bean mixture. Season with salt & pepper, garnish with Parmesan cheese.
