Streusel-Capped Muffins

Ingredients: 
TOPPING
  • 1/4 cup sugar
  • 1 1/2 Tablespoons flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 Tablespoon butter, softened
MUFFINS
  • 2 1/2 cups flour
  • 2/3 cup sugar
  • 2 1/2 teaspoon baking powder
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup butter, melted
  • 2 eggs, beaten

Instructions: 
  • Grease 12-cup muffin pan or line with paper baking cups. Preheat oven to 400F.
  • In small bowl combine all topping ingredients with fork until mixture resembles coarse crumbs; set aside.
  • In large bowl combine muffin ingredients (dry, then wet) just until flour is moistened.
  • Fill prepared pans 2/3 full. Spoon crumb mixture over muffins. Bake until muffins test done with wooden pick, about 25 minutes. Remove to wire rack to cool.
