Stuffed Chicken Hollandaise

Serves 4

Ingredients: 
Stuffed Chicken:
  • Cooking String
  • 4 - 6oz boneless, skinless chicken breasts (pounded to 1/2" thick)
  • 8 thin slices smoked ham
  • 4 ounces onion & chive cream cheese spread
  • Salt & Pepper
  • 4 Tablespoons olive oil

Hollandaise Sauce:
  • 3/4 cup butter
  • 4 egg yolks (at room temp)
  • 1 Tablespoon freshly squeezed lemon juice
  • Salt & Pepper, to taste

Instructions: 
  • Preheat oven to 375F.
  • Season pounded chicken breasts with salt & pepper. 
  • Lay 2 slices of ham on each chicken breast.
  • Spoon a 2" strip of cream cheese mixture on one of the edges.
  • Fold in and roll the chicken firmly until you have a tight roll, secure by tying with cooking string (2 per chicken breast).
  • In an ovenproof saute pan, heat the olive oil and brown all sides of the chicken breasts.  
  • Transfer to the oven and bake for 30-40 minutes (depending on the thickness), flipping once.
  • When chicken is almost done cooking (last 5-10 minutes), make the hollandaise sauce:
    • Place egg yolks, lemon juice and salt/pepper in a blender and mix until combined.
    • Melt butter in a saucepan or microwave. 
    • With the blender on low, slowly pour in the hot butter and mix until combined. 
  • Place stuffed chicken on a serving platter and cover with warm hollandaise sauce.
