Season pounded chicken breasts with salt & pepper.
Lay 2 slices of ham on each chicken breast.
Spoon a 2" strip of cream cheese mixture on one of the edges.
Fold in and roll the chicken firmly until you have a tight roll, secure by tying with cooking string (2 per chicken breast).
In an ovenproof saute pan, heat the olive oil and brown all sides of the chicken breasts.
Transfer to the oven and bake for 30-40 minutes (depending on the thickness), flipping once.
When chicken is almost done cooking (last 5-10 minutes), make the hollandaise sauce:
Place egg yolks, lemon juice and salt/pepper in a blender and mix until combined.
Melt butter in a saucepan or microwave.
With the blender on low, slowly pour in the hot butter and mix until combined.
Place stuffed chicken on a serving platter and cover with warm hollandaise sauce.
