Taco Dip (GF)

Serves 6 as an appetizer

Ingredients: 
  • 1/2 of a 16oz can refried beans (regular or black)
  • 1/2 cup salsa
  • 2 avocados, peeled & pitted
  • 1 Tablespoon lime juice
  • 1 Tablespoon cilantro, chopped
  • 1/2 teaspoon salt
  • 2/3 cup sour cream
  • 1/2 cup Mexican cheese blend
  • 2 green onions, chopped
  • 1/2 tomato, chopped
  • Black olives for garnish, if desired
  • Tortilla chips of choice

Instructions: 
  • Mix beans and salsa together and spread evenly across a pie plate.
  • Combine avocado, lime juice, cilantro and salt in a separate bowl and mash/mix well.  Spread over the top of the bean mixture. 
  • Spread sour cream evenly on top of avocado layer. 
  • Garnish with cheese, green onion, tomatoes and black olives.
  • Serve with tortilla chips.
