Teriyaki Pork

Ingredients: 
  • 1/4 cup olive oil, divided
  • 2-1lb pork tenderloins, trimmed
  • 1/2 cup soy sauce
  • 1/4 cup rice vinegar
  • 3 Tablespoons brown sugar, packed
  • 2 teaspoons grated fresh ginger
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 green onions, chopped
  • Sesame seeds

Instructions: 
  • Heat 2 Tablespoons olive oil over med-high heat in large skillet.
  • Brown the tenderloin in the oil until browned on all sides, then transfer to a 4-quart slow cooker.
  • In a medium bowl combine soy sauce, vinegar, brown sugar, remaining olive oil, ginger, garlic, salt and pepper and mix well.
  • Pour over the pork, cover and cook on low for 2 hours (or until 145F).
  • Cut meat into slices, drizzle with cooking liquid and garnish with green onions and sesame seeds.
