Teriyaki Salmon

DIETS: GF KT
Serves 2
Time: 1.5 - 2.5 hours (depending on marinade time)

Ingredients: 
  • 2 - 6 ounce salmon fillets
  • 1/4 cup sesame oil
  • 1/4 cup fresh lemon juice
  • 1/4 cup soy sauce
  • 2 Tablespoons brown sugar
  • 1 teaspoon freshly grated ginger
  • 2 garlic cloves, minced
  • Olive oil
  • Sesame seeds for garnish

Instructions:
  • In a wide bowl or large ziplock bag, mix all ingredients except salmon, olive oil and sesame seeds.
  • Add salmon to the marinade and toss to coat. 
  • If using a bowl, cover and let marinade in the refrigerator for 1-2 hours, flipping occasionally.
  • Remove salmon from marinade and set aside.  Pour marinade in a small saucepan and bring to a boil over high heat.  Reduce heat to medium-low and let simmer until ready to serve.
  • Heat olive oil in a large skillet over med-high heat.  Add salmon and fry until it flakes easily with a fork - about 3 minutes per side.
  • Serve salmon with remaining sauce spooned over. 
  • Sprinkle with sesame seeds and serve immediately
