Turkey & Gravy

Ingredients: 
  • 4 boneless turkey breasts (or 3-lb roast)
  • 2 cloves garlic, grated
  • 1 stick butter, softened
  • 1 tablespoon fresh parsley, minced
  • 1 tablespoon fresh chives, minced
  • 1 tablespoon fresh thyme, minced
  • 1 tablespoon fresh rosemary, minced
  • 1 tablespoon freshly squeezed lemon juice
  • 2 tablespoons flour
  • 1 1/2 cups chicken stock
  • 1 tablespoon Worcestershire sauce
  • 1/3 cup heavy cream
  • 1/4 cup freshly grated Parmesan cheese
  • Salt & Pepper, to taste

Instructions: 
  • Preheat oven to 350F.  
  • Place turkey on a baking rack on top of a baking sheet.
  • Combine the garlic, butter, parsley, chives, thyme, rosemary and lemon juice and mix well.
  • Rub half the mixture over the turkey and sprinkle with salt & pepper. (save the rest of the mixture for the gravy).
  • Roast the turkey 45 minutes (or as directed on package)
  • Melt remaining garlic-herb butter over medium heat in medium saucepan.
  • Whisk in flour until well combined.
  • Add stock, Worcestershire sauce and salt/pepper and cook over medium heat until thickened.
  • Remove from heat and stir in the cream and cheese.  
  • Serve over cooked turkey
