Turkey Kielbasa & Bean Pasta

Ingredients: 
  • 1.5 cups rotini or rigatoni pasta, uncooked
  • 2 Tablespoons olive oil
  • 12 ounces turkey kielbasa, cut into 1/2" slices
  • 1.5 cups onion, chopped
  • 4 large garlic cloves, minced
  • 1 (16oz) can cannellini beans, drained
  • 1 (14.5oz) can diced tomatoes, undrained
  • 2 Tablespoons balsamic vinegar
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic salt
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper

Instructions: 
  • Cook pasta according to package directions, then rinse with cool water and set aside.
  • Meanwhile, heat olive oil in large skillet over medium heat until hot. 
  • Add sausage and onion and cook until onion is tender (8-10 min), stirring often.
  • Add garlic and cook until fragrant (about 1 min).
  • Stir in all remaining ingredients.  Bring to a boil; Cover and reduce heat to medium-low.  Simmer for 10 minutes.
  • Add cooked pasta to the skillet and mix well.  Heat until pasta is warmed. 
  • Serve immediately.
